[DOC] Example notebook on RDST shapelets interpretation

Describe the issue linked to the documentation

Based on comments and discussion from the literature, there seem to be some confusion in how to interpret dilated shapelets from RDST. To fix this :

• Create an example notebook describing how we compute and extract shapelets in RDST
• Add a section on the interpretability of dilated shapelets,
• Add a section on the interpretability of shapelets based on their discriminative characteristic (min, argmin, occurence).
