Convert Antithesis logs to json format

This will require specifying --log-format=json for avalanchego and also specifying the corresponding flag in the C-chain config. This should only require a change to the docker compose.

This issue has become stale because it has been open 60 days with no activity. Adding the lifecycle/frozen label will cause this issue to ignore lifecycle events.
